Blueberry Crisp

Serves 6

Ingredients:

5 cups blueberries
2-4 Tbs. sugar (depending on sweetness of the fruit)
3 Tbs. flour
½ cup rolled oats ("Instant")
½ cup brown sugar, packed
¼ cup flour
¼ tsp. each: ground nutmeg, cinnamon and ginger
¼ cup unsalted butter, softened
¼ cup chopped nuts or coconut
½ tsp. salt

Method:

1.     Pre-heat oven to 375°.

2.     Toss the berries with the 3 Tbs. flour and sugar, using as much sugar as needed to balance tartness of the fruit. Place fruit in an 8"x8" baking dish.

3.     Combine oats, brown sugar, flour and spices until blended. Cut in the butter until mixture resembles course crumbs. Stir in nuts or coconut. Sprinkle over fruit.

4.     Bake for 30-35 minutes or until fruit is tender and topping is golden brown. Serve warm with ice cream or room temperature with whipped cream.
